Italian Pignoli Cookies

Ingredients

8 oz almond paste
1 egg white
½ cup sugar
1 cup pine nuts
¼ cup confectioners sugar

Directions

  1. Preheat oven to 325°. Line cookie sheet with parchment paper.
  2. Break almond paste into small pieces and place into food processor or mixer. Add sugar and mix well. Add egg white and mix until moist and sticky; approximately 2 minutes.
  3. Place pine nuts into a shallow bowl. Shape almond paste mixture into tablespoon-sized balls and dip into pine nuts.
  4. Place cookies about 2 inches apart on prepared cookie sheet. Press down gently on each cookie to ensure pine nuts stick. Bake 20 minutes on middle shelf, move to upper shelf for approximately 8 minutes or until light golden brown.
  5. Move parchment paper with cookies onto baking racks to cool. Lightly dust with confectioners sugar. When completely cool, carefully peel cookies off paper. Yields 18-20 cookies.
